Chicken Zinger

Nope, not the secret behind the Colonel’s spicy burger (sorry KFC lovers), but a baked chicken dish which makes a great substitute for a Sunday roast. The ingredients might seem a bit summery, but they do a great job of kicking this dark, winter weather where the sun don’t shine. It’s also pretty low maintenance, so you’ll still be able to drink wine, wrap presents, watch the Come Dine With Me omnibus, or whatever else you want to do.

Ingredients (serves 2-3)

6 organic chicken joints, legs and thighs

8 cloves of garlic

20 or so baby plum tomatoes

1 chilli, de seeded and chopped

1 lemon

150ml white wine

Handful of fresh basil leaves

Olive oil

Eat Essaouira

So like I was saying, after Marrakesh we took a road trip out to the coast to Essaouira, which is a bit of a funny place. Known as Morocco’s windy city, it was a bit of a hippy hot spot in the 60s and reputedly visited by Hendrix. When you visit, you can see that it would have once been a really charming place, but it’s reputation as a chilled holiday spot has led to it being over developed, which is a bit of a shame.

To be honest, after Marrakesh it felt a bit like arriving in a faded seaside town like Hastings or Grimsby (no offense to the residents of either), but after spending a few days there, we both developed a soft spot for Essaouira, and this was in no small part due to what we ate.

Having been so spoiled for good food in Marrakesh, and falling in love with the stalls on Jamaa Al Fnaa, we thought that it would probably be downhill from there, but that really wasn’t the case. We ate really well in Essaouira, and discovered some great places to get stuffed.

The first meal we had was at one of the fish stalls near the sea wall. Probably the closest thing Essaouira has to the food stalls in Marrakesh, there are 30 or so of them that sell the catch of the day, each and every day, simply grilled over coals. The owners stand out of the front, showing off their wares and giving passers by the hard sell.

Eat Marrakesh

I’ve got to say that I absolutely loved Marrakesh, and probably my favourite experience of our whole honeymoon was eating in Jemaa El Fna at night. During the day, Marrakesh’s main square is home to performing monkeys, snake charmers, magicians, medicine men, dentists and all kinds of other fantastic oddities. But come dusk, it transforms into what can only really be described as the World’s biggest restaurant.

The dozens of food stalls that fill the square at night start setting up at around 5 o’clock. From a distance you can see the smoke rising from the braziers, and before long you are hit by a combination of all sorts of delicious smells. There are a myriad of ways to fill your belly, with most stalls specialising in one or just a few dishes from grilled meats to eggs, snails to harira, and a few things that might offend the squeamish.

Leftover Roast Chicken Pies

There are few meals as satisfying as a roast chicken. Even if you’re having a REALLY shit day, a roastie can turn tings around. What’s more, there are always leftovers, which means there’s always another meal or two to be eeked out of the carcass.

We roasted a particularly big bird last weekend, so I decided to do the leftover chicken justice by making a few pies. It’s a pretty easy recipe, especially if you buy ready rolled puff pastry from the supermarket. The below will make 4 small pies or one biggun. Here’s how it’s done.

Ingredients

250g roast chicken – mixture of white and brown meat

1 large leek, finely chopped

1 large carrot, chopped

1 large clove garlic, chopped

2 rashers smoked bacon, chopped

70g chestnut mushrooms

300ml chicken stock

1ooml single cream

100ml white wine

Local Hero #8 Mangal Ocakbasi

I was first taken to Mangal 1 6 or so years ago by my friends Lou and Liam who lived down the road in Hackney at the time, and I’ve been going back ever since. Back then it had a real impact on me because I’d never really been anywhere like it in the UK before. It’s completely unpretentious, a bit ramshackle, and when you step through the door you feel like you’re in a different country.

You immediately get hit by the heat and smell of grilling meat from the massive open barbecue style grill that is slap bang in the middle of the restaurant. And that’s what the Turkish ocakbasi restaurants are all about. Meat and fire. The menu is dominated by kebabs, mostly lamb and chicken, although you can also get quail and offal too. I suggest you go with a few friends, because you’re going to want to try everything, but I can heartily recommend the following. (more…)

French Chicken Sandwich

P1010835One of the joys of roasting a chicken is that there are usually leftovers. In fact, we normally buy a bigger bird so there’s more chicken left. This French chicken sarnie is one way to do those leftovers justice. It may be a bit more fiddly than your average sandwich, but as usual, the more love you put in the more flavour you get out.

Ingredients

Leftover roast chicken

Good quality French baguette

Mayo

Dijon mustard

Black pepper

Olive oil

1/2 clove garlic

Rocket
