I went to Shopsin's yesterday after reading this. Opted for the H6, thats the hot gravy sandwich in a bowl with jerk chicken shrimp and corn mush...nom nom nom! Amazing food and banter, will be recommending this place to any friends visiting the city. A real shame that the place has had to downscale so much in the new premises though.

Loved the idea of this recipe though so have just made a batch of the pancakes for a full house here...so good . i would usually use a pancake recipe where the eggs and yolk are separated and whites whipped to stiff peaks then folded into the yolk batter. however my kind American friends showed me this super simple method. Works perfectly for this recipe:

American Pancakes

Ingredients:

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1 teaspoon vanilla

Directions:

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
