Good morning / afternoon wherever you are.
We touched down in San Francisco on Monday afternoon, think we’re still a bit jet lagged, but we’re getting there.
We’ve only been in San Fran for a few days, but we’ve already been reminded about how much this city loves food. Every day we’re being treated to amazing grub, from stellar sandwiches, to the freshest seafood and everything in between. We’ve also paid our first, of what surely will become regular, pilgrimages to the Tartine bakery, and it didn’t disappoint.

I went to my induction morning at the SFBI on Wednesday, which was pretty awesome. Its a bit of a dog to get to, but once you’re through the doors, the atmosphere is great. It’s basically a fully functioning bakery, with a college attached. I met about half of my classmates, and there’s a really good mix of people of all ages, from all over the world. There are peeps like me who are thinking about a career change, bakers who want to hone their craft, and chefs who want to broaden their skill set. We also briefly met the don of the institute, Michel Suas. He didn’t say too much, but had a really warm and inspiring vibe about him. It’s going to be hard work, but very rewarding.

We think we’ve found a small but very nice apartment in Mission / Noe Valley to move into in a couple of weeks, which is exactly where we wanted to live, and should take some of the pain out of my commute. In the mean time, posts are probably going to be a bit sporadic, but fear not, we’ll be collecting and compiling plenty of stuff to share once we get properly settled.

There are few things in life that lift my spirits in a morning like a bacon sarnie does. Hungover, or not, that combination of salty, smoky bacon, bread, butter and whatever condiment takes your fancy is hard to beat. Fruit salad, muesli, granola, porridge, whilst all lovely in their own way, are always going to take second place.
The fine example above is the Old Spot bacon sandwich at St John Bread & Wine, which really is a thing of beauty. Thick cut bacon, yielding, lightly griddled white bread with a toothsome crust, butter and a generous helping of home made tomato ketchup on the side. As they say on their site, it truly is the Bacon Sandwich of your nocturnal fantasies.
But I’m not a butty elitist. In many ways I’m just as happy scarfing down some greasy spoon bacon slapped between a couple of slices of Sunblest. However you get your fix, it’s a breakfast that always feels like a bit of a treat, as opposed to just a way to start the day.
Truly one of life’s simple pleasures.

Having packed and said goodbye to our flat, I’ve been feeling a little bit melancholy about leaving London, and I started to think about what I’m going to miss. Particularly food wise.
Here are my Top 10 food based ‘missing you already, London’ things in no particular order:
1. Polpo, and it’s sisters in all their forms.
2. My kitchen. Hope we can find an apartment in SF with a decent range.
3. My morning cup of coffee from Kaffiene.
4. Mangal 1 for its meat, fire and eccentricity.
5. Pizza and pasta from Maletti. Still so good after all these years.
6. The St John Bread & Wine bacon sandwich. In fact, everything St John.
7. My local Italian restaurant in Battersea, Antipasto & Pasta. Family run, solid, good atmosphere.
8. Lahore’s lamb chops. Wonder if there’s any good Pakistani food in San Fran?
9. Raymond Blanc on the telly.
10. The Anchor & Hope / 32 Great Queen Street.
I think I’ve probably cheated a bit by doubling up, but its my blog so I’ll do what the f**k I like.
Things I’m not going to miss? Public transport. Living hell.

Whilst doing some San Francisco research a couple of months ago, the missus sent me a link to this set of photos on The Selby blog featuring a bakery called Tartine. The minute I saw the pictures of the breads, pasties and all those other good things, we knew we had to pay them a visit.
After doing a bit more digging, I found this super inspiring video on the accompanying Tartine bread site.

Apologies for the radio silence. We’ve been moving out of our flat, and it’s been brutal. I never want to see those boxes again. But enough of my woes, back down to business.

I’ve been meaning to start a new series of posts on Hand To mouth for quite some time about the simple food pleasures in life. The kind of unfussy stuff that needs little or no preparation, has few ingredients, but always delivers in terms of taste (at least in my opinion).
Prompted by being sent some lovely London Cure Scottish Smoked Salmon by the very generous people at Forman & Field, here is the first of these posts for your delictation. Smoked Salmon.
Before you start grumbling, I’m not just writing this because I’ve been sent some free stuff. Like any product I give airtime to on this blog, I genuinely love smoked salmon. And for me, the less it’s messed with, the better. I like to let the salmon do the talking.
The ritual is simple. Brown bread, plenty of butter, smoked salmon, a generous squueze of fresh lemon juice, and a few turns of freshly milled black pepper.
Absolute heaven, and would be a dead cert (if you’ll pardon the pun) as a starter for my death row meal.

So, after a fair few months of planning and saving, I’ve got some exciting news. Hand To Mouth is re-locating to the US for six months. The wife and I are upping sticks to head to San Francisco at the end of April, where I’m going to be doing a professional bread and pastry diploma at the awesome San Francisco Baking Institute.

The seed for this adventure was first planted a little over a year ago when I read this post on the Chow blog. My wife and I were feeling increasingly disillusioned with our careers / industries, and had been talking for some time about opening our own cafe bakery. But with very little in the way of experience, we didn’t really know where to start. It was beginning to feel like it may always be a bit of a pipe dream, and then I read the Chow post and a large penny dropped.
So we did some research, found out more about the course, talked about it for a while, and decided to go for it. To be honest, it’s all a bit scary, but also exhilarating. If you’re a regular reader of the blog, you’ll know that I’ve been bitten by the baking bug, but this is a whole new ball game. I’m going to be well out of my comfort zone, and when you throw into the mix quitting a perfectly good, well paid job at one of the UK’s most respected ad agencies, you’ve either got a recipe for disaster, or the best thing I’ve ever done with my life.
We don’t have any time frame on when / if we’re going to start our own business, but that’s partly what this trip is all about. As well as doing the course, we’re going to do some work experience, travel around the States, and generally immerse ourselves in country’s food culture, whilst getting a plan together of the kind of business we want to open. But I guess there’s also every chance that we might end up by missing our day jobs, and we’ll yearn to return to London at the end of our adventure. Only time will tell.
So can an Advertising Wanker be transformed into a Master Baker? You’ll have to keep it locked right here to find out.

I was talking with a few people on Twitter the other day about Food Trucks, and was wondering why the UK hasn’t cottoned on to the trend like they have in the States. Admittedly we don’t really have a tradition of them, the closest thing we have is probably the ice cream van, but there are flickers of something going on with the likes of The Meatwagon (before his trailer got stolen) and a few mobile coffee pioneers like the super stylish Attridge & Cole.

And then, straight out of left-field comes The German Baker. My mate Javed has been telling me for some time about these bread vans that pitch up at locations around London (and the rest of Southern England) and ply their doughy wares. He swears by their breads, so I thought it was high time I got my act together and paid them a visit.

We’ve had quite a nice burst of sun in London over the past few days, which got me thinking about salads. But seeing as we’re not quite out of the woods temperature wise yet, this is greenery with guts.
The beetroot is warm and sweet with a bit of a spicy kick, and goes really well with the tangy, creamy goats cheese. If you wanted to, you could also throw in a few crushed walnuts, but I didn’t have any to hand, so I didn’t.
Y’all ready?
Ingredients (serves 2)
500g beetroot
1 tablespoon honey
1 teaspoon chilli flakes
1 teaspoon fresh thyme, chopped
1 teaspoon, fresh oregano, chopped
Salt and pepper
Olive oil
